Steamed Dungeness Crab Stuffed with Fresh Coconut
1 Dungeness crab (or 6 blue crabs)
1 cup freshly grated coconut
2 shallots, minced
2 cloves of garlic, minced
3 basil leaves (or Thai basil)
3 thin slices of lime
1 kaffir lime leaf (optional)
1 jalapeño pepper, sliced
1 pandan leaf
1 tbsp peanut oil

  1. Steam the crab for 5 minutes. Lift the top shell and clean out the gills. Set the top shell aside.

  2. Sauté the shallots and garlic in oil until lightly browned. Add the grated coconut, basil, kaffir lime leaf and jalapeño pepper and cook for 3 minutes. Season with salt or fish sauce.

  3. Stuff the crab with the coconut mixture. Put the lime slices on top and cover the crab and coconut mixture with the crab's top shell. Tie with the pandan leaf.

  4. Steam the dungeness crab for 10 - 15 minutes. Steam blue crabs for 7-10 minutes.

  5. Serve with achara (pickled green papaya) and garlic vinegar.
